Constructed with befittingly luxurious white steel and a buffalo magnolia handle, this elegant and aesthetically pleasing kitchen knife is sure to lend a touch of sophistication to any meal.

“Kiritsuke” knifes are an all-purpose knife featured a diagonally cut-off tip. Kiritsuke knives are one of the few multipurpose traditional Japanese blades, and can be used as a slicer or a vegetable knife. These sword shaped knives feature a straighter and wider edge than a yanagi for vegetables, and a longer blade than an usuba for slicing fish with ease. The user needs more skill with traditional Japanese knives in order to utilize this unique kiritsuke style design properly. Traditionally, these knives are used only by the chefs as a symbol of status.

Shirogami No.2 has minimal impurities and a very fine grain structure, so it is ideal for fine cutting tools such as Japanese traditional-style knives. Despite being a ‘simple’ carbon steel, Shirogami No.2 has very good edge retention and it is also very easy to re-sharpen. Recommended for first-time users of Japanese traditional-style knives.

Kurouchi Finish, the unprocessed (black) part on the top side of the blade has already developed a dark patina, which protects the blade and gives it a traditional Japanese look.

Knife broke the second day

The knife edge chipped on the second day I had it, tried numerous times to reach out to customer support and get some help in either fixing or replacing the knife. I sent out emails on 5 different occasions and never received and email back. I tried to use different emails to see if I could get a response but that didn’t help. I spent $300 on the knife and wouldn’t recommend anyone else spend their money here.
