Discover the ultimate in culinary finesse with our Gyuto VG-5 Polished Western Handle 270mm. Crafted from high-grade VG-5 stainless steel, this professional-level blade promises superior sharpness and durability, allowing you to savor and share the artistry of flavor for many meals to come. With its polished western handle, this blade is an elegant and ergonomic experience, delivering a refined culinary bliss.

The Gyuto is an all-purpose knife with a pointed tip and a slender blade. The pointed tip enables an easy targeted cut and helps slice meat and fish. It used to be a knife for professional chefs but nowadays is also used by households. Its curved blade helps you apply force to cut food without effort.

VG-5 is a sub group of the V Gold line of stainless steels. It is a similar steel to the ubiquitous VG-10 with a slightly larger grain structure which is the result of a higher vanadium content. It is a rugged steel, able to take a nice edge and hold it through a long session at the chopping board. It is a relatively easy steel to sharpen as compared to most other stainless alloys available.

Migaki (Polished) line of knives feature beautiful edge geometry and are quite thin behind the edge and at the spine. They have an excellent cutting feel and are light and feel very nimble and comfortable in the hand.

Handmade Forging

With the traditional forging process, the molecules of the iron material are finely tuned, leading to the completion of a "living kitchen knife" that breathes.

The process of heating and forging each material for mold making is repeated three or four times to quickly shape the blade and create durability before the carbon is released from the steel causing it to lose its original strength.

The blade is the most important factor in achieving the best possible sharpness. It is polished in our own blade factory to produce uncompromising sharpness.

The highest priority is placed on sturdiness, a sense of luxury, and a shape that is easy to grip and does not cause fatigue even after long hours of use.
