Hakata Blue steel #2 Kurouchi Sumi Urushi Handle 165mm

Regular price¥29,800

Create a truly unique culinary experience with the Hakata Blue steel #2 Kurouchi Sumi Urushi Handle 165mm culinary knife. This luxurious blade will provide a precise balance of sharpness and strength; perfect for delicate tasks like slicing seafood or vegetables. The Urushi handle provides an exclusive and elegant tactile sensation, adding a touch of sophistication and refinement to your culinary journey.

Aogami No.2 (Hitachi Metals Ltd.) is made by adding Chromium and Tungsten / Wolfram to Shirogami No.2. This results in increased toughness and the production of hard carbide molecules which improve edge retention. Many knife users have noted that while Aogami No.2 is very similar to Shirogami No.2 in terms of edge sharpness, it has slightly superior edge retention.

Kurouchi Finish, the unprocessed (black) part on the top side of the blade has already developed a dark patina, which protects the blade and gives it a traditional Japanese look.

Super all rounder

I have used my knife on one occasion so far and I had never experienced slicing raw carrots with the feeling of cutting through soft butter.

The knife is weighted perfectly overall and balanced perfectly between the handle and the blade.
I also appreciate the videos explaining clearly the use and sharpening of the knives; so helpful.
On receipt of my knife, I received a personalised card, which is a very nice touch. I look forward to buying more knives. With a set of Musashi knives, I don't need to buy any other knives for my kitchen ever.

The knife that changed everything.

Title says it all. Does what it says on the box. Also the staff were great. The French lady who helped us was cool as and knew her stuff.

Powerful Elegance

This knife is very simplistic both visually and in composition. It is also elegant with it's pleasing curves, and thoughtful design. But what pictures can't prepare you for is its feel and power. The knife is light, nimble, and incredibly balanced. It is the sharpest knife I have ever handled. It glides through the root end of a onion with little effort, slices and chops with laser precision. Root vegetables such as carrots and beets, and winter squash like butternut, are no match for this knife as it disposes of them quickly.

I was hesitant to spend the money asked for this knife as I have had, and have the best of Germany, and France in my arsenal, but this is a completely new and wonderful experience.

I will be adding more Japanese steel to my collection. This is an incredible knife!!

Also, the service from Musahsi was exactly as advertised. Top level!

Awsome first Japanese knife!!!

Camping, woods, pocket, hunting, vintage, army combat, cooking, throwing, etc..but never had a japan hand made one. I enjoy even more than usual preparing my meal, with my dexterity, the kind of cuts this kind of knife allow me to do.

Handmade Forging

With the traditional forging process, the molecules of the iron material are finely tuned, leading to the completion of a "living kitchen knife" that breathes.

The process of heating and forging each material for mold making is repeated three or four times to quickly shape the blade and create durability before the carbon is released from the steel causing it to lose its original strength.

The blade is the most important factor in achieving the best possible sharpness. It is polished in our own blade factory to produce uncompromising sharpness.

The highest priority is placed on sturdiness, a sense of luxury, and a shape that is easy to grip and does not cause fatigue even after long hours of use.
