Bunka knives are one of the few multipurpose traditional Japanese blades, and can be used as a slicer or a vegetable knife. These sword shaped knives feature a straighter and wider edge than a Yanagi for vegetables, and a longer blade than an Usuba for slicing fish with ease. The user need to be more skilled with traditional Japanese knives in order to utilize this unique Bunka style design properly. Traditionally, these knives are used only by head chefs as a symbol of status.

Aogami No.2 (Hitachi Metals Ltd.) is made by adding Chromium and Tungsten / Wolfram to Shirogami No.2. This results in increased toughness and the production of hard carbide molecules which improve edge retention. Many knife users have noted that while Aogami No.2 is very similar to Shirogami No.2 in terms of edge sharpness, it has slightly superior edge retention.The traditional style of Japanese carving has a long history of simplicity and inspiration. Although this technique (Chokin) is gradually disappearing into history, we hope to do our best to let more people feel its beauty.This is a limited edition of our kitchen knives in collaboration with the carver Asamura Takao, whose over 50 years of carving skills make each piece look so spiritual. Each design has been polished for months, even a year or more.Kurouchi Finish, the unprocessed (black) part on the top side of the blade has already developed a dark patina, which protects the blade and gives it a traditional Japanese look.

Due to the nature of handcrafted items, we do not accept returns based on customer preference. Defective items may be exchanged within 7 days of delivery.

Wipe dry after use. Avoid acidic ingredients. Hand wash only with neutral detergent. Do not use dishwashers. For carbon steel, apply oil to prevent rust.
