The Japanese word "Ko" means “small” or “short” in English, and the Ko-yanagi is a small Yanagiba¥ that is commonly used to fillet and slice small fish, particularly Aji (Japanese horse mackerel). The Ko-yanagi is useful knife for home cooks that prefer to clean and fillet the smaller sizes of fish themselves.

Shirogami No.2 has minimal impurities and a very fine grain structure, so it is ideal for fine cutting tools such as Japanese traditional-style knives. Despite being a ‘simple’ carbon steel, Shirogami No.2 has very good edge retention and it is also very easy to re-sharpen. Recommended for first-time users of Japanese traditional-style knives.

The traditional style of Japanese carving has a long history of simplicity and inspiration. Although this technique (Chokin) is gradually disappearing into history, we hope to do our best to let more people feel its beauty. This is a limited edition of our kitchen knives in collaboration with the carver Asamura Takao, whose over 50 years of carving skills make each piece look so spiritual. Each design has been polished for months, even a year or more.

Traditional Kasumi polished finish. Kasumi roughly translated to “mist” or “cloud” and refers to the hazy appearance of the soft steel/iron cladding, in contrast to the fine polished cutting edge. This elegant finish is very common on traditional style Japanese blades.

A beautful piece of art in the kitchen!

This knive is not only razor sharp but also very beautiful. As soon as we laid eyes on this knive we were both in love with it and wanted to add it to our collection. The craftsmanship is out of this world and we have received many compliments when showing off the knive to friends and family.
We will certainly be visiting your beautiful store again when we visit Japan next year and I am hopeful that there will be more knives like these available for us to purchase! See you then!

Product Features

Handmade Forging

With the traditional forging process, the molecules of the iron material are finely tuned, leading to the completion of a "living kitchen knife" that breathes.

Durability

The process of heating and forging each material for mold making is repeated three or four times to quickly shape the blade and create durability before the carbon is released from the steel causing it to lose its original strength.

Sharpness

The blade is the most important factor in achieving the best possible sharpness. It is polished in our own blade factory to produce uncompromising sharpness.

Handle

The highest priority is placed on sturdiness, a sense of luxury, and a shape that is easy to grip and does not cause fatigue even after long hours of use.
