The Japanese word "Ko" means “small” or “short” in English, and the Ko-yanagi is a small Yanagiba¥ that is commonly used to fillet and slice small fish, particularly Aji (Japanese horse mackerel). The Ko-yanagi is useful knife for home cooks that prefer to clean and fillet the smaller sizes of fish themselves.

Shirogami No.2 has minimal impurities and a very fine grain structure, so it is ideal for fine cutting tools such as Japanese traditional-style knives. Despite being a ‘simple’ carbon steel, Shirogami No.2 has very good edge retention and it is also very easy to re-sharpen. Recommended for first-time users of Japanese traditional-style knives.

Kurouchi Finish, the unprocessed (black) part on the top side of the blade has already developed a dark patina, which protects the blade and gives it a traditional Japanese look.

Very blunt for a new knife

We were pretty disappointed to get home and try out our new knife for the first time. Last time I visited Japan we purchased an incredible, sharp knive in Kyoto, which prompted us to look for another on our return to Japan. Although this knife looks great, it is very blunt. Very disappointed with our purchase on this occasion
