This Santoku knife is crafted from Blue steel #2, with a Kurouchi finish and a Buffalo Magnolia handle. “Santoku" means an all-purpose knife, including meat, fish, and vegetables. It is designed to have both features of Japanese Nakiri (vegetable knife) and Japanese Gyuto (meat knife). Being highly convenient and practical, it is most widely used in households. Recommended for those new to Japanese kitchen knives and novice cooks.

Aogami No.2 (Hitachi Metals Ltd.) is made by adding Chromium and Tungsten / Wolfram to Shirogami No.2. This results in increased toughness and the production of hard carbide molecules which improve edge retention. Many knife users have noted that while Aogami No.2 is very similar to Shirogami No.2 in terms of edge sharpness, it has slightly superior edge retention.

Kurouchi Finish, the unprocessed (black) part on the top side of the blade has already developed a dark patina, which protects the blade and gives it a traditional Japanese look.

The stuff of musashi is amazing good answered every question i had .
About the knife its pretty good ,
The feeling of knifes is good.nothing bad i can said besides that it isnt that sharp and need to sharp it

Good knives if you have the skill to straighten them.

As I said in the title these are good knives for someone that has the skill and knows how to straighten a knife, as a knife maker myself this was not a problem.
I bought six of these knives for a sharpening class I’m holding and they will do just fine for me now that I have straightened them out however having to straighten six out of six of them seems a bit much.

I bought this hoping it would be a good starting knife and it absolutely is. It came sharp, however, sharpening the knife with an extra fine stone made it even better!
