Sharp and resilient, this knife is a lasting testament to style and quality.

The Yanagi is a long slicing knife that was designed to slice thin slices of fish for sushi and sashimi. The beauty of its elegant thin blade is its ability to slice through an ingredient in long uninterrupted strokes, preserving its integrity and freshness. Even the simplest of tasks are elevated with a handcrafted knife that is as beautiful as it is functional.

Aogami No.2 (Hitachi Metals Ltd.) is made by adding Chromium and Tungsten / Wolfram to Shirogami No.2. This results in increased toughness and the production of hard carbide molecules which improve edge retention. Many knife users have noted that while Aogami No.2 is very similar to Shirogami No.2 in terms of edge sharpness, it has slightly superior edge retention.Traditional Kasumi polished finish. Kasumi roughly translated to “mist” or “cloud” and refers to the hazy appearance of the soft steel/iron cladding, in contrast to the fine polished cutting edge. This elegant finish is very common on traditional style Japanese blades.

Best Knife

Excellent balance, extremely sharp. As soon as I learn to use right handed I will be using this knife for many years to come. I know I will be buying more from Musashi. I can't wait to learn the basics of sushi making since I now have my most important tool.

Broken tip

The yanagiba I received has a weird tip that seem like it was damaged. Upon closer inspection from an expert, i can confirm that the original tip is broken and Musashi had tried to replace and fix the tip. However, the tip is still not good, it was bended to the side

Tout à été parfait. Livraison dans les temps, couteau d'excellente qualité.
Petit bémol pour les frais de douanes qui n'étaient pas précisés à la commande.
Mais l'attention portée à l'emballage et la qualité générale vallent largement 5 étoiles
Merci
