The Yanagi is a long slicing knife that was designed to slice thin slices of fish for sushi and sashimi. The beauty of its elegant thin blade is its ability to slice through an ingredient in long uninterrupted strokes, preserving its integrity and freshness. AUS-10 Stainless Steel
AUS-10 steel is one of the best steels used to make good-quality knives. It has good edge retention, toughness, hardness, corrosion resistance, and wear resistance.It is very easy to sharpen the knives made of AUS-10 stainless steel and they attain a very perfect edge. The sharpening of AUS-10A steel is easy and can be achieved through different sharpening materials.

Migaki (Polished) line of knives feature beautiful edge geometry and are quite thin behind the edge and at the spine. They have an excellent cutting feel and are light and feel very nimble and comfortable in the hand.
