“Santoku" means an all-purpose knife, including meat, fish, and vegetables. It is designed to have both features of Japanese Nakiri (vegetable knife) and Japanese Gyuto (meat knife). Being highly convenient and practical, it is most widely used in households. Recommended for those new to Japanese kitchen knives and novice cooks.

Aogami No.1 steel is a pure steel with fewer impurities than normal steel, and has the characteristic of being able to produce a much stronger hardness than Aogami No.2 steel. It is the best choice for those who are in the main profession, as well as for those who are looking for better sharpness and longevity of the blade.

Suminagashi translates as floating ink and refers to the beautiful marbled wave-like patterns that extend through the blade from the tip to the heel, unveiling a new mosaic with every sharpening.
