This Funayuki Sabaki Aogami-Super Kurouchi 180mm knife is a must-have for any kitchen! This knife is made from only the highest quality materials, with a Kurouchi buffalo ebony handle, so it's both beautiful and a pleasure to use.

The Funayuki (舟行) is a traditional Japanese knife that is used by fisherman aboard their boats; indeed, Funayuki literally translates in to English as "going on boat". These knives are often used by fishermen to clean, fillet and quality test small or medium-sized fish. However, in the past, fishermen also used their Funayuki to prepare food for themselves (either out at sea, or back at port), so the knife also had to be capable of cutting meat, vegetables and fruit.

Aogami-Super Carbon Steel | Blue Super Steel
Aogami-Super (Hitachi Metals Ltd.) is one of the greatest Japanese Carbon Steels. In addition to containing more Carbon, Chromium and Tungsten than Blue Steel No.1, it also includes Molybdenum. It has very good edge sharpness and excellent edge retention, but is also capable of attaining high hardness without being brittle. Consequently, many knife enthusiasts rate Aogami Super as one of the very best High Carbon Steels in the world.
Kurouchi Finish, the unprocessed (black) part on the top side of the blade has already developed a dark patina, which protects the blade and gives it a traditional Japanese look.

Great piece of kit

I bought this in person, and it is great. For anyone complaining about the finish - bah - it’s a great tool… function over fashion. It is a heavier option, more on par with the weight of a German chef’s knife than most Japanese options which I liked for this one. I think you need to feel a knife before buying.

Altough the blade is Sharp, this knife finish is very rough and in fact it looks like a knife made by the fisherman and not by a blacksmith.
