"Honesuki" is a knife specifically designed for breaking down whole chickens. Its pointed tip allows a chef to get very close to the bone, to remove as much meat as possible. While its triangle shaped heel is perfect for cutting threw cartilage and separating joints. It is also possible to use this knife to break down fish or other meats.

AUS-8 is an affordably priced Molybdenum Stainless Steel, widely favored by high-volume knife manufacturers. We recommend Molybdenum steel kitchen knives for less experienced users due to their reasonable cost, ease of sharpening, and impressive corrosion resistance. Additionally, AUS-8 includes Vanadium, enhancing the steel's strength, toughness, and edge retention.Migaki (Polished) line of knives feature beautiful edge geometry and are quite thin behind the edge and at the spine. They have an excellent cutting feel and are light and feel very nimble and comfortable in the hand.

Returns for Personal Reasons
As our products are shipped directly from Japan and due to the sanitary nature of our items, we do not accept returns or exchanges based on personal preferences (e.g., you don’t like how it looks, or you have personalized your knife). Only returns or exchanges due to defects or order discrepancies will be accepted after delivery.

Cancellations
Please contact us before requesting a cancellation. For personal cancellations, the refund will be reduced by the full shipping costs (both sending and return) and a 15% restocking fee. Cancellations are processed within 1–2 weeks after the returned item is confirmed at our warehouse in Japan.

Exchanges for Damaged or Incorrect Items
We conduct a strict quality check before shipping every item. If your product arrives damaged, defective, or incorrect, please contact us within 7 days of delivery.
We will arrange a free exchange, or if the item is out of stock, offer a refund or alternative replacement.

Pre-orders typically take between 30 to 365 days to produce, depending on the forging process and finish of the desired knife.

As a rule, pre-orders cannot be canceled after payment, as these items are of limited quantity and made specifically by commissioning a craftsman.

If you must cancel for personal reasons within the production period, a 30% cancellation fee will be applied. However, if the order is not fulfilled within the specified production timeframe, it may be canceled without any handling fee.

Wipe dry after use. Avoid acidic ingredients. Hand wash only with neutral detergent. Do not use dishwashers. For carbon steel, apply oil to prevent rust.
