The Sakimaru Takohiki is a variation of the Yanagiba and Takohiki, and is used for much the same purposes. Sakimaru Takohiki are easily identifiable by their blade tips, which look similar to that of a Katana. Their blades have a straight spine similar to the Takohiki, and a slightly curved edge like the Yanagiba, resulting in a knife which looks somewhat like a combination of the two.

The Honyaki knives can only be made by a few skilled craftsmen in Japan in same method as traditional Japanese sword. It is an art of craftsmanship with Japanese traditional techniques, and features outstanding sharpness and durability. The production is very small, due to the difficulty and time-consuming process.

Shirogami No.2 has minimal impurities and a very fine grain structure, so it is ideal for fine cutting tools such as Japanese traditional-style knives. Despite being a ‘simple’ carbon steel, Shirogami No.2 has very good edge retention and it is also very easy to re-sharpen. Recommended for first-time users of Japanese traditional-style knives.The mirror finished White Paper (Shirogami) Steel Knife is made from famous Yasugi steel, known as prime high carbon steel, specifically developed for tools and knives.

Its blade is made through Honyaki process, so the edge gets very hard and retains its sharpness for a long time.

The honyaki knives cannot be mass-produced. They are primarily for professional chefs and for the most important person because of the highest quality traditional-style Japanese knives.

About the handle, the beautiful Buffalo Tsuba (bolster) equipped to the Ebony Wood handle represent high-quality and excellent durability, that means made for professional originally. The handle shape of Japanese-Style Octagonal figure fits better comfortably to your hand.

Best blade and my favorite knife i have used

I have used many different brands throughout my career. This blade beats everyone I have put into my hand by far. Holds an edge longer than most and very easy to sharpen when need be. I have had mine for years and will never look towards another brand. Best knife in a professional kitchen and will not disappoint.
