Introducing the Santoku Blue steel #2 Kurouchi Chokin Sakura-Fuji Buffalo Ebony Handle 170mm, a premium kitchen knife crafted exclusively from blue steel and featuring a Kurouchi Chokin Sakura-Fuji and buffalo ebony handle. Carefully forged with optimal balance and weight for superior control and precision, this elegant kitchen knife will become your go-to for precision cooking.

“Santoku" means an all-purpose knife, including meat, fish, and vegetables. It is designed to have both features of Japanese Nakiri (vegetable knife) and Japanese Gyuto (meat knife). Being highly convenient and practical, it is most widely used in households. Recommended for those new to Japanese kitchen knives and novice cooks.

Aogami No.2 (Hitachi Metals Ltd.) is made by adding Chromium and Tungsten / Wolfram to Shirogami No.2. This results in increased toughness and the production of hard carbide molecules which improve edge retention. Many knife users have noted that while Aogami No.2 is very similar to Shirogami No.2 in terms of edge sharpness, it has slightly superior edge retention. The traditional style of Japanese carving has a long history of simplicity and inspiration. Although this technique (Chokin) is gradually disappearing into history, we hope to do our best to let more people feel its beauty. This is a limited edition of our kitchen knives in collaboration with the carver Asamura Takao, whose over 50 years of carving skills make each piece look so spiritual. Each design has been polished for months, even a year or more.

Kurouchi Finish, the unprocessed (black) part on the top side of the blade has already developed a dark patina, which protects the blade and gives it a traditional Japanese look.
