Worth the trip

Went to Kappabashi, bought the knife myself. Incredible blade. Ultralight even thought reliable and solid! Amazing quality handle. Really happy with the product. Would recommend to someone who looks for a slicer for roasts or a solid blade to approach big fish. Professional use only! It is a privilege to work with it and its worth the price. Special thanks to Jack who followed me trough different options and prices, giving insight on the products and the blacksmiths too.

Carbon steel offers exceptional sharpness and edge retention, but requires careful maintenance to avoid rust. Stainless steel is easier to care for and resists corrosion, making it ideal for everyday use.
