Daily Care – Respect through Routine
Wipe dry immediately after use. Especially for high-carbon steels like Aogami or Shirogami, moisture invites rust.
Avoid acidic ingredients. Clean the knife promptly after cutting lemons, tomatoes, or other acidic foods.
Use only neutral detergent and a soft sponge. Never use a dishwasher or abrasive scrubbers.
Rust is not a flaw. It is a lesson — a reminder to respect the blade.
Rust Prevention & Storage
Choose the right whetstone:
Beginner: #1000 (medium)
Advanced: #3000–8000 (finishing)
Repair: #400 (rough)
Sharpen with rhythm and intention. Let each stroke reflect your focus.
To sharpen is not just to fix — it is to reconnect with your tool, and with yourself.
Sharpening – The Way of Refinement
Apply camellia oil (or rust-preventive oil) to the blade if storing for a long time.
Store in a dry, well-ventilated area. Avoid placing the blade where it contacts other metals.
