Shirogami No.2 has minimal impurities and a very fine grain structure, so it is ideal for fine cutting tools such as Japanese traditional-style knives. Despite being a ‘simple’ carbon steel, Shirogami No.2 has very good edge retention and it is also very easy to re-sharpen. Recommended for first-time users of Japanese traditional-style knives. The handles on these knives are Octagonal Oak wood dye Japanese Lacquer (Urushi) that recalls the images of Japanese tradition.

The coating film of Urushi exudes a warm sense of intimacy when in contact with the skin that can almost be likened to the touch of an infant’s skin. With antibacterial and disinfectant properties, it is also provides an exceptional sense of security. urushi is a totally natural lacquer, and with use develops a distinct, deeply refined luster and texture which cannot be reproduced with chemically developed coating materials. This naturally fosters strong feelings of attachment and deference.

Amazing knife for beginning your first dishwasher shift at mcdonalds

I got this $20,000 knife for my 15 year old who is starting their first shift at mcdonalds. He told me it cuts the green scrub pads perfectly, and he cleans it with the steel wool.

Great entry level knife

Amazing every day knife. I use it for chopping anything from vegetables to beef bones. I would recommend this knife for any seriously home cook, or buy it as a gift for your kid going to college.
