AUS-8 is an affordably priced Molybdenum Stainless Steel, widely favored by high-volume knife manufacturers. We recommend Molybdenum steel kitchen knives for less experienced users due to their reasonable cost, ease of sharpening, and impressive corrosion resistance. Additionally, AUS-8 includes Vanadium, enhancing the steel's strength, toughness, and edge retention.Migaki (Polished) line of knives feature beautiful edge geometry and are quite thin behind the edge and at the spine. They have an excellent cutting feel and are light and feel very nimble and comfortable in the hand.

A Masterpiece of Precision: This Yanagiba Knife Has Transformed My Sushi-Making Experience!

I've been a sushi enthusiast for years, but this Yanagiba AUS-8 with its stunning dark blue urushi handle has completely elevated my culinary journey. From the moment I unboxed this 210mm beauty, I knew I was holding something special.

The mirror-polished blade isn't just for show - it glides through fish with incredible precision, creating those perfect, glass-like cuts that are essential for premium sushi. Whether I'm preparing maguro, hamachi, or even the most delicate cuts of white fish, each slice is absolutely pristine.

What truly sets this knife apart is its remarkable balance. The dark blue urushi handle isn't just gorgeous to look at - it provides the perfect grip and weight distribution that makes every cut feel effortless. After using this knife, I finally understand what master sushi chefs mean when they say their knife feels like an extension of their arm.

The AUS-8 steel holds its edge beautifully, and when maintained properly, it keeps its razor-sharp edge for an impressively long time. The 210mm length is perfect for most home sushi preparation, offering enough blade length for full, smooth pulls while remaining manageable for those still perfecting their technique.

For anyone serious about their sushi-making journey, whether you're a passionate home chef or a professional, this knife is an investment that will bring joy to your craft for years to come. The combination of traditional craftsmanship with modern steel technology makes this yanagiba an absolute dream to work with.

Quality Highlights:
• Exceptional edge retention
• Perfect balance and weight distribution
• Mirror-polished blade for clean cuts
• Elegant dark blue urushi handle
• Professional-grade 210mm length

Simply put - this is the yanagiba I wish I had discovered years ago. Every time I prepare sushi now, I look forward to using it. A truly remarkable piece of craftsmanship that's worth every penny!
