“Santoku" means an all-purpose knife, including meat, fish, and vegetables. It is designed to have both features of Japanese Nakiri (vegetable knife) and Japanese Gyuto (meat knife). Being highly convenient and practical, it is most widely used in households. Recommended for those new to Japanese kitchen knives and novice cooks.

VG-1 Stainless Steel
VG-1 (Takefu Special Steel Co., Ltd.) is quality Japanese High Carbon Stainless Steel that is popular for making cutlery. It has good corrosion resistance, edge retention and edge sharpness and is capable of achieving a relatively high Rockwell hardness.

Damascus is a laminated steel knife made of several layers of different steel materials. The center of the blade is made of hard steel for sharpness, and both sides are covered with multiple soft steel materials. The multiple steels are metallurgically joined, not by plating or glue. The more the blade is forged, the more complex the ripples become, and the more beautiful the unique grain pattern becomes.

Awesome quality. I took a trip to Japan earlier this year and was able to visit the storefront, which definitely made me want to purchase a knife for my brother in-law who loves working in the kitchen. I got him this knife with his name engraved on it in Japanese as a Christmas gift. Good knife

Grwat looking knife very sharp works great only thing is I’m a chef and was using it as my daily knife and the handle is a little lose now. Nothing major just thought it would hold up a little better. I only use it for veggies mainly now but still love it!
