This Menkiri is perfect for slicing, shaping, and cutting noodles. It has a 270mm stainless steel molybdenum blade with a magnolia handle. The blade is strong and sturdy, ideal for slicing even the toughest dough, making it easier and faster to prepare noodles. The handle is comfortable and lightweight, providing a secure grip and balance when prepping.

"Menkiri" translates to "Noodle-Cut". These knifes are perfect for slicing threw layers of wheat dough and separating individual noodles. The handle is tucked above the cutting edge to allow for a longer blade and a more stable chop.

Migaki (Polished) line of knives feature beautiful edge geometry and are quite thin behind the edge and at the spine. They have an excellent cutting feel and are light and feel very nimble and comfortable in the hand.
