This one-of-a-kind Sujihiki White steel #1 Sumi Urushi Handle is the perfect complement to your culinary repertoire. Crafted from premium White steel #1 and a refined Urushi handle, its 240mm length is crafted for effortless carving and slicing. Enjoy the luxury of an elegant, sophisticated knife with a full tang handle that is as aesthetically pleasing as it is practical.

Sujihiki translates literally to 'Flesh Slicer' and it does exactly what the name suggests. It's perfect for carving and slicing roasts, turkey, raw meats, fish, and all other proteins. The extended blade length allows you to slice with one long stroke instead of sliding the knife back and forth in a sawing motion, and the reduced surface area prevents the blade from sticking to the meat. With a Sujihiki, clean slices of brisket or ultra thin will become a breeze to execute.

White Steel No.1 is made by further refining White Steel No.2 and adding more Carbon. The extra Carbon allows it to achieve a slightly higher HRc. than White Steel No.2, but also makes it a bit more brittle. White No.1 is very popular with professional chefs who make traditional Japanese cuisine because it can be sharpened to an exceedingly fine edge, has very good edge retention and is easy to re-sharpen.

Migaki (Polished) line of knives feature beautiful edge geometry and are quite thin behind the edge and at the spine. They have an excellent cutting feel and are light and feel very nimble and comfortable in the hand.

The edge is the carbon steel which is examined good carbon steel, forged and clad stainless. Since the side is stainless steel, it is hard to rust and it is sanitary.

Beautiful knife

I really really wanted a better knife for my meat slicing purposes.
After asking advice in the store, we chose the sujihiki over a gyuto, because of the larger pieces of bbq meats I tend to prep and carve.
I did have a yanagiba which I used becore, but it never quite did the job.
The knife itself is well made and very good to look at. Feels nice to handle.
