Mainly used for vegetables with a flat, rectangular blade, a flat tip and a thicker spine. Best for cutting Napa and cabbage into strips. Also suitable for peeling, chopping, rotary cutting, shaving, and making garnish.

Aogami-Super Carbon Steel | Blue Super Steel
Aogami-Super (Hitachi Metals Ltd.) is one of the greatest Japanese Carbon Steels. In addition to containing more Carbon, Chromium and Tungsten than Blue Steel No.1, it also includes Molybdenum. It has very good edge sharpness and excellent edge retention, but is also capable of attaining high hardness without being brittle. Consequently, many knife enthusiasts rate Aogami Super as one of the very best High Carbon Steels in the world.

Kurouchi Finish, the unprocessed (black) part on the top side of the blade has already developed a dark patina, which protects the blade and gives it a traditional Japanese look.

Amazing knife incredibly sharp

Even though i am not a professional i do love to cook. I have thought about owning high end cutlery for a long time and found Musashi thru a lot of research and everything i read and more was true about their products. I bought a gyuto to begin with and was blown away by the kurouchi finish, balance, and style so much i have since bought a couple more knives to make a set. The Nakiri makes my vegetables sing(LOL) razor sharp and effortless cutting it makes me love to cook even more. Customer service is outstanding thank you Zachary your help with an engraving that was above and beyond.
