This Kiritsuke Blue steel #2 Kurouchi Black Ishime Urushi Handle 210m is a luxurious kitchen essential, designed with exquisite attention to detail. Crafted with a traditional Japanese Kurouchi Sumi Urushi handle and blades forged from the finest Blue steel #2, it makes for a functional yet sophisticated addition to any home cook’s collection.

“Kiritsuke” knifes are an all-purpose knife featured a diagonally cut-off tip. Kiritsuke knives are one of the few multipurpose traditional Japanese blades, and can be used as a slicer or a vegetable knife. These sword shaped knives feature a straighter and wider edge than a yanagi for vegetables, and a longer blade than an usuba for slicing fish with ease. The user needs more skill with traditional Japanese knives in order to utilize this unique kiritsuke style design properly. Traditionally, these knives are used only by the chefs as a symbol of status.

Aogami No.2 (Hitachi Metals Ltd.) is made by adding Chromium and Tungsten / Wolfram to Shirogami No.2. This results in increased toughness and the production of hard carbide molecules which improve edge retention. Many knife users have noted that while Aogami No.2 is very similar to Shirogami No.2 in terms of edge sharpness, it has slightly superior edge retention.

Kurouchi Finish, the unprocessed (black) part on the top side of the blade has already developed a dark patina, which protects the blade and gives it a traditional Japanese look.

Not happy

My first knife was absolutely amazing but I’ve not had the best experience with this one.

First of all, the handle has a gap next to where the blade attaches to it and can see glue marks all around it.

The lower end of the blade is not level and makes it crooked while chopping. And it’s not sharp either.
