The Gyuto is an all-purpose knife with a pointed tip and a slender blade. The pointed tip enables an easy targeted cut and helps slice meat and fish. It used to be a knife for professional chefs but nowadays is also used by households. Its curved blade helps you apply force to cut food without effort.

The central core material SKD11 (alloy tool steel) used for the blade edge is a performance steel that is incredibly rich in Carbon equal to the famed Yasuki Aogami, and is tempered to the Rockwell 62-64 for exceptional sharpness and edge holding and properties.

Originally SKD11 steel was created for cutting metal. Its suitability for knife edges' comes from its resistance to abrasion and its ability to hold a cutting edge.
Also its high content of Chromium greatly contributes to the blade's anti-corrosion. Damascus outer Pure-Nickel layers will never rust.
This 73 layered material produces a rust resistant blade that will maintain its beautiful pattern perfection over the years.

The blade is a triple lamination that reproduces a traditional Damascus surface. The two Damascus outer layers are each made of 36 alternating forged layers of Pure-Nickel and SUS410 stainless steel polished to reveal a pattern that is as unique as a fingerprint.

Damascus is a laminated steel knife made of several layers of different steel materials. The center of the blade is made of hard steel for sharpness, and both sides are covered with multiple soft steel materials. The multiple steels are metallurgically joined, not by plating or glue. The more the blade is forged, the more complex the ripples become, and the more beautiful the unique grain pattern becomes.

The handles on these knives are Octagonal Oak wood dye Japanese Lacquer (Urushi) that recalls the images of Japanese tradition.

The coating film of Urushi exudes a warm sense of intimacy when in contact with the skin that can almost be likened to the touch of an infant’s skin. With antibacterial and disinfectant properties, it is also provides an exceptional sense of security. urushi is a totally natural lacquer, and with use develops a distinct, deeply refined luster and texture which cannot be reproduced with chemically developed coating materials. This naturally fosters strong feelings of attachment and deference.
