This Deba White steel #2 Kurouchi Sumi Urushi 165mm is sharp as a knife, and ready to slice and dice! Its white steel and classic kurouchi finish make it a reliable workhorse in the kitchen, perfect for tackling any cutting job you can throw at it. Get slicing!

Deba is a sturdy fish knife with a solid and thick blade. The blade doesn't bend even if force is applied. It is often used to remove large fish scales, handle the bones, open the back of the fish, and cut the bones. The blade's thickness and weight can help to cut off fish heads without damaging the blade, as well as the small bones of chicken.

Shirogami No.2 has minimal impurities and a very fine grain structure, so it is ideal for fine cutting tools such as Japanese traditional-style knives. Despite being a ‘simple’ carbon steel, Shirogami No.2 has very good edge retention and it is also very easy to re-sharpen. Recommended for first-time users of Japanese traditional-style knives.

Kurouchi Finish, the unprocessed (black) part on the top side of the blade has already developed a dark patina, which protects the blade and gives it a traditional Japanese look.
