This Santoku Stainless Clad Aogami-Super Kurouchi Tsuchime Western Handle 180mm is a truly exquisite culinary essential crafted for superior performance. Expertly clad in stainless steel, with an Aogami-Super blade coated in Kurouchi finish, it features a Western-style handle for comfortable, secure grip. “Santoku" means an all-purpose knife, including meat, fish, and vegetables. It is designed to have both features of Japanese Nakiri (vegetable knife) and Japanese Gyuto (meat knife). Being highly convenient and practical, it is most widely used in households. Recommended for those new to Japanese kitchen knives and novice cooks.

Aogami-Super Carbon Steel | Blue Super Steel
Aogami-Super (Hitachi Metals Ltd.) is one of the greatest Japanese Carbon Steels. In addition to containing more Carbon, Chromium and Tungsten than Blue Steel No.1, it also includes Molybdenum. It has very good edge sharpness and excellent edge retention, but is also capable of attaining high hardness without being brittle. Consequently, many knife enthusiasts rate Aogami Super as one of the very best High Carbon Steels in the world.

Kurouchi Finish, the unprocessed (black) part on the top side of the blade has already developed a dark patina, which protects the blade and gives it a traditional Japanese look.

The knife bears visible impressions of the hand-forging process (round hammer dents on the blade), which gives it a beautiful finish and also prevents food from sticking to the blade.

The packaging went above and beyond my expectations. Japanese newspaper and a nice cardboard box along with a short letter and a postcard. The knife itself is beautiful and it’s patina-ing nicely with use. Make sure you take good care of the knife by washing and drying it by hand after using it. One of the sharpest knives I’ve ever used, and it holds its edge well. I also bought the saya and it was completely worth it. Overall, very satisfied.
