“Santoku" means an all-purpose knife, including meat, fish, and vegetables. It is designed to have both features of Japanese Nakiri (vegetable knife) and Western Gyuto (meat knife). Being highly convenient and practical, it is most widely used in households. Recommended for those new to Japanese kitchen knives and novice cooks.

VG-10 Stainless Steel
VG-10 (Takefu Special Steel Co., Ltd.) is one of the most popular and highly regarded Japanese Stainless Steels for making cutlery. It has strong corrosion-resistance and can provide very good edge sharpness and edge retention. VG-10 belongs to a group of steels called "Cobalt Steels”, but it also contains Vanadium, which improves its strength, toughness and edge retention.

The knife bears visible impressions of the hand-forging process (round hammer dents on the blade), which gives it a beautiful finish and also prevents food from sticking to the blade.

Damascus is a laminated steel knife made of several layers of different steel materials. The center of the blade is made of hard steel for sharpness, and both sides are covered with multiple soft steel materials. The multiple steels are metallurgically joined, not by plating or glue. The more the blade is forged, the more complex the ripples become, and the more beautiful the unique grain pattern becomes.

Une belle acquisition! La largeur de la lame permet un meilleur contrôle sur les jointures, donc ça fait de belle coupe en confiance. Très plaisant à utiliser.

Lovely-looking knife with a very hard, sharp edge. Cuts beautifully and so far touches up well. Handle is comfortable.

Santoko VG-10 Tsuchime Damascus

I am truly so happy with this knife - everything about it. The blade is super sharp and re-sharpens very easily. It is very balanced in my hand with the weight distribution being well designed. It is my first experience of the traditionally shaped handle and I love it - it feels very present and connected with my hand. And - it is an object of beauty! Lovely company to deal with as well as super fast shipping to New Zealand. Only regret is that I didn't do it years ago.

Beauty with an Edge

After a really fast delivery and having read the personalised card, opening the box revealed a truly magnificent piece of craftsmanship. Stunning in every detail with an edge that cuts though the softest of vegetables and meat effortlessly. It compliments the Gyuto, Nakiri, and Petty knives bought at the same time with the same specification. All of them five stars.

Product Features

Handmade Forging

With the traditional forging process, the molecules of the iron material are finely tuned, leading to the completion of a "living kitchen knife" that breathes.

Durability

The process of heating and forging each material for mold making is repeated three or four times to quickly shape the blade and create durability before the carbon is released from the steel causing it to lose its original strength.

Sharpness

The blade is the most important factor in achieving the best possible sharpness. It is polished in our own blade factory to produce uncompromising sharpness.

Handle

The highest priority is placed on sturdiness, a sense of luxury, and a shape that is easy to grip and does not cause fatigue even after long hours of use.
