斜めに切り落としたような形状が特徴で、洗練された日本の伝統デザインとして世界中に評価されている万能型の包丁です。刃先を使った細かい細工や作業、くり抜きなどにもお使いいただけます。中でも野菜を刻んだり、刺身を引いたりするのによく使われています。

古くから刃物鋼に適した砂鉄の産出地として知られる島根県安来市、日立金属(株) 安来工場で製造されるヤスキハガネは不純物の量や添加物の有無によって、主に「白紙」「青紙」の炭素鋼・合金鋼系と「銀紙」等のステンレス鋼に分類されています。 いずれも厳選された高純度原料を、日本刀起源のタタラ製鉄技術を汲む日立独自のレシピで配合することで、高硬度と強い靱性を両立させています。 「銀紙」は5号、3号、1号と区別されますが、銀紙3号鋼は、硬度を決定づける炭素の含有量が0.95~1.1%と最も高く、シリーズ中、特に包丁に適した鋼種とされています。

磨き仕上げとは、焼入れによって黒くなったブレード(刃)の部分全体を、研いでピカピカに磨き上げた状態です。黒打ちに比べると多少錆びやすいと言われていますが、上品で美しい見た目になります。
